➡ How do you prepare for FSMA?
1. You first need to be trained by an accredited trainer. Get to a class that will certify you as a Preventative Controls Qualified Individual. It will show you what you need to know.
2. Next you need to survey what you have with a GAP analysis. Your old HACCP plan is a good place to start, but it will NOT be enough to meet the new requirements.
3. Develop the Preventative Controls in support of your Food Safety Plan. This is a new way of looking at things, and your program will need to reflect this. Supplier control is very important for everyone.
4. How do you monitor and what do you do when things run off the rails? FDA does not expect perfection, but they do expect action. If something is wrong in your system you can't ignore it.
Remember, everything that is in your Food Safety Plan is now accessible by FDA? It is written in a way that is clear and concise? Can you defend it in court? (You may need to if you don't do it right)
